Excalibur® Dehydrator

The following are questions commonly asked by customers to Excalibur® president:
ROGER W. ORTON.

  1. How long have you been in business?
Excalibur®  was established in 1973 at Sacramento, California.

  2. What types of foods can be dehydrated?
Almost all fruits, most vegetables, meats, fish, herbs, and some dairy products.  Excalibur® owners enjoy an expanded list over most grocery stores.  The list includes such exotic fruits as papaya, mango, kiwi fruit, strawberries, and all sorts of vegetables, especially tomatoes.  Foods that are high in oil content do not dehydrate very well, such as butter or tuna.  Salmon, on the other hand dehydrates wonderfully because of its lean composition.

  3. Why does dehydrated food taste and smell so good?
During the drying process, water is evaporated out of foods.  The natural flavors, sugars, and aromas are concentrated.  Fruits such as pears, strawberries, and pineapple burst with a mouth-watering natural candy flavor.

  4. How does dehydrating compare with other methods of food preservation?
When you add all the costs, such as equipment purchased, maintenance, and ongoing energy consumption, dehydration is the least expensive.

  5. Where is Excalibur® made?
In the good old U.S.A., in Sacramento, California and all components are made in the U.S.A., too!

  6. Does Excalibur® make both a round and a square dehydrator?
No!  When we designed the commercial dehydrator we discovered the SIX ESSENTIAL QUALITIES need in all good dehydrators.  They are good electrical design, adjustable thermostat, speed of drying, durability, cleanability, and versatility.  It is impossible to design a round unit that meets all the above criteria.  For example - the electrical components will always be below the food being dried and clean up is almost impossible in a round dehydrator.  Excalibur®'s design meets and exceeds the six qualities.

  7. Why does Excalibur® dry so fast?
The Parallexx™ Drying System.  The Excalibur® has a heating element to warm the air, and adjustable thermostat to control the temperature, and a fan to push the  air horizontally over each tray.  New air is drawn in the rear and moist saturated air is pushed out the front.

  8. Why is the EXCALIBUR the easiest dehydrator to clean?
As part of the Parallexx™ Drying System, the  Excalibur® has a seamless bottom that easily wipes clean.  Removable drying inserts on each tray are easily rinsed clean, and trays are sturdy polycarbonate, which may be placed anywhere in a dishwasher without warpage.

  9. Is an adjustable thermostat important?
Yes.  For best flavor, fastest drying, highest nutrition retention, and overall versatility, an adjustable thermostat is a must.  The following temperatures are recommended for best dehydrating.  Herbs -95 degrees, cake decoration - 100 to 110 degrees, yogurt - 115 degrees, vegetables -125 degrees, fruit - 135 degrees, and jerky -145 degrees.

  10. Are dehydrated foods safe for diabetics?
Yes.  The advantage to dried foods is that they taste sweeter, but they contain the same amount of sugar as fresh fruit.  Be sure to follow your physician's recommended guidelines, and one apple fresh equals one apple dried.

  11. Will the timer turn off the dehydrator when I am away or asleep?
Yes.  Unlike the digital timers, that do not restart after electrical outages the one used on the Excalibur® is the more expensive motor driven type.  A small motor runs only when the power is on.  If power is interrupted, the motor stops.  When power resumes, the motor restarts, continuing the drying process.  This prevents foods from spoiling if power is interrupted.

  12. What is the EXCALIBUR warranty?
All Excalibur® products include a one-year warranty for parts and labor.  We also offer an extended ten-year warranty to factory direct purchases only at an additional cost of $25.00
