Marilyn and I have marveled
at the unbelief of our

cups whole wheat flour (I grind
my wheat berries using a grain
mill. See our complete
line of grain mills
HERE.)
2 teaspoons Rumford Baking
Powder (does not contain
aluminum)
1 teaspoon baking soda
2 teaspoons cinnamon
½ teaspoon Celtic or Eden Sea
Salt
1 ½ teaspoons freshly-ground
flaxseed or 1 tablespoon
B-Flax-D (egg substitute)
Mix the above ingredients then
add the following:
½ cup chopped pecans
2/3 cup organic sucanat (health
food store)
1 ½ cup peeled, diced apples
1 cup organic applesauce (oil
substitute)
1 teaspoon Frontier vanilla
Mix batter well. Spritz a
9 x 13 inch pan with olive oil.
Pour batter in pan and bake at
350 degrees for 35-40 minutes or
until golden brown. While
cake is baking made the glaze.
GLAZE:
1 cup sucanat
½ cup Earth Balance margarine
¼ cup almond milk
Bring these ingredients just to
a boil. Reduce heat and
cook for about 3 minutes,
stirring constantly. With
a toothpick, poke holes in hot
cake, then pour glaze over cake.
