1  1/2 cups whole wheat flour (I recommend the Nutrimill or WonderMill for making fresh flour.)

2 tsp Rumford baking powder (contains no aluminum)

1 tsp baking soda

1  1/2 tsp cinnamon

1/2 tsp Celtic Sea Salt

2 tsp ground flaxseed (if using B-Flax-D, use 1 Tbs.)

 

Mix the above ingredients and add:

 

2/3 cup raw honey

1 cup organic applesauce

1/2 cup chopped fresh pineapple or 1 small can crushed pineapple, drained

1 1/2 cups shredded carrots

1/2 cup chopped walnuts

 

Mix the batter well. Spray a 9 x 13 inch pan with olive oil and dust with unbleached bread flour to prevent sticking.  Pour batter into pan and bake at 350 degrees for 30-35 minutes or until golden brown.

 

Cream Cheese Icing:

8 oz. non-dairy cream cheese (Since the rice cream cheese contains casein, this is the one time that I do prefer to use Tofutti, a soy-based cream cheese substitute.  As a rule, I avoid soy, but since this is the only acceptable cream cheese substitute I can locate,  I will use it at Christmas.  I have served the cake with no icing, and it tastes great.)

4 Tbsp Earth Balance

1/4 cup pure maple syrup

1 tsp Frontier vanilla (contains no alcohol)

Beat cream cheese and Earth Balance well.  Add syrup and vanilla and continue beating until well blended.  Spread on cooled cake.
